Instructions
- Pat the beef brisket dry. Mix smoked paprika, brown sugar, kosher salt, black pepper, garlic powder, onion powder, and cayenne pepper. Rub evenly on the brisket.
- Preheat smoker to 225°F with wood chips. Smoke brisket fat side up for 6–8 hours, adding wood chips or water as needed. Or slow cook in oven or crockpot at 225°F for 6–8 hours, adding beef broth halfway through.
- Cook until brisket reaches 195°F–205°F and meat is tender to a fork.
- Remove brisket and let rest covered for 30 minutes. Slice or shred into bite-sized pieces.
- Butter slider buns and toast in skillet or grill until golden and crispy on edges.
- Assemble sliders with brisket, drizzle BBQ sauce, add coleslaw, and place top bun. Press gently.
- Serve immediately for best texture and flavor.
