- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1 cup boiling water
- 8 ounces semi-sweet chocolate, finely chopped
- 1 cup heavy cream
- 2 tablespoons unsalted butter, softened
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Add milk, vegetable oil, eggs, and vanilla to dry ingredients. Mix on medium speed until smooth, about 2 minutes.
- Stir in boiling water carefully until just combined; batter will be thin.
- Divide batter evenly between pans and tap to release air bubbles.
- Bake for 30-35 minutes. Test with a toothpick; it should come out clean or with a few moist crumbs.
- Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
- Prepare ganache: place chopped chocolate in a heatproof bowl.
- Heat cream until simmering, pour over chocolate, and let sit 1 minute.
- Stir until smooth, add butter, and stir to glossy finish. Cool to spreadable consistency.
- Spread ganache on one cake layer, top with second layer, then cover entire cake with remaining ganache.
